Chicory pie

Bake and caramelize your chicory in a pan with butter, brown sugar and a little bit of madeira or brown beer. Place your puff pastry over it and cook in the oven, until your dough is nicely dark brown. When it's done, take it out of the oven and turn the pie on a plate and enjoy. Also delicious with a fresh apple-nut salad.

Oak - Lamb neck, carrot and chicory

The lamb neck is cooked for 12 hours, then baked and smoked on the barbeque. That comes together with carrots, chicory, sauce from the lamb and fresh herbs of the season.

Scallops are roasted and then marinated with soya. This comes with beetroot salad mixed with black garlic, crunch of beetroot, beet sweet sour and lime.

That also explains why the island is so green. Corfu or how the Greece people say Kerkyra is well known by tourist. We visited this island in august so fully packed with tourist. But still we will show you how to see the middle and north part of the island in a week, without being overtaken by all tourists. We will give you our stops and of course the places where we stayed.

Brac - The pearl of the mediterranean sea

Check here my video of this 1 week trip in Brac, probably one of the most beautiful islands I visited in the mediterranean sea. It's touristy in the summer season and there are plenty of guesthouses, small hotels and b&b's. But you don't find big hotels and huge resorts so the faces of the villages didn't change that much. A lot people visiting this island by boat. But from this year, there are some jets flying to the airport of Brac from Brussels. So that's what I did, I booked a 2 way ticket for 140 euros in august.

Baked and grilled pineapple

Clean and cut your pineapple, cover it with brown sugar, butter, vanilla and rosemary. Baked it in the oven until it is cooked and let it cool down in his own juice. After it cooled down, grill the peaces of pineapples and you will be amazed by the results.

For us Palawan was by far the most beautiful island we ever visited. It's so various, we saw the most beautiful coral reefs, amazing remote islands, white sand beaches and endless jungle.
